Sensational Chicken & Apricot Salad

  • 500g chicken - skinless & boneless
  •  2 tbsp butter
  • 1tbsp mayonnaise
  • 1 cup thick natural yoghurt
  • 3 tbsp Absolutely Apricot Chutney
  • 1 tsp Mild Balti Curry Paste
  • 6 plump dried apricots - chopped
  • 1 cup mushrooms - sliced
  • 1/4 cup parsley - chopped
  • Black Peppercorns

Saute chicken in butter with freshly cracked Peppercorns, leave to cool on a paper towel.  Mix mayonnaise, yoghurt, Absolutely Apricot Chutney and Mild Balti Curry Paste together.  Add apricots, mushrooms and parsley  and then  cooled chicken and mix thoroughly.  Pop into fridge for approx 1 hour to let the flavours mingle.  Serve in individual bowls as a refreshing lunch or light dinner.

Absolutely Apricot Chutney not only makes this dish a fantastic flavoursome experience but is also awesome on your favourite sandwiches or served as a pre-dinner nibble with doughy bread, and butter.  Mild Balti Curry Paste adds a depth of flavour to almost any dish.  If you have adventurous taste buds you might like to  try the Hot Balti Curry Paste.
